Pão de queijo

Pão de queijo or traditional Brazilian cheese bread makes the perfect gluten-free snack. The tapioca flour gives these cheesy treats a crispy exterior and deliciously chewy center. 

Feel free to experiment adding other types of cheese, spices, or fresh herbs. We use a mixture of sharp cheddar, parmesan and add a little roasted garlic powder for an extra kick of flavor.

Method

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Place all the ingredients in a blender and blend on high for 30 seconds.

  3. Let the batter rest for 20-30 minutes.

  4. Pour the batter almost to the top of a greased mini muffin tin and bake for 13-15 minutes until golden brown. (If using popover or regular muffin tins bake for 20-25 minutes)
