Verjus is the juice of underripe grapes, deployed as a vinegar alternative in traditional French cuisine. Domaine du Siorac's verjus is made from sweetly sour Périgord grapes, and it works wonderfully in place of citrus juice in cocktail recipes and in marinades, for deglazing, and as a condiment for fresh seafood.
