Also known as hara chana, green chickpeas are picked and dried when young. They can be used just like conventional chickpeas in curries, falafel, salads, and more. Most dried beans benefit from an overnight soak. Rinse them clean and cover by at least 2 inches of water and soak for at least 8 hours. You can use the soaking liquid to cook the beans as well.
