Guar gum, also known as guaran, is a polysaccharide thickener derived from guar beans. With five to eight times the water thickening potency of corn starch, guar gum is a powerful hydrocolloid that should be used sparingly in recipes. Use it to thicken or stabilize: salad dressing, sauces, pastry fillings, and ice cream.
