Grown by native farmers on the Gila River Indian Reservation in Arizona, Black Tepary Beans are a rare heirloom variety that is high in fiber, protein and has a low glycemic index. The variety was almost extinct until a few seedlings were found and revived by Ramona and Terry Button, the husband and wife duo behind Ramona Farms. The beans have a firm texture and hearty, meaty flavor. Use in place of any dry bean in soups, stews, casseroles, dips, and spreads in Mexican and Southwest cuisine.
Rinse and soak overnight. Add 5-6 cups of water per cup of beans and bring to a boil. Reduce heat and simmer covered for 4-6 hours or until fork-tender, skimming and discarding any foam. Season to taste and cook uncovered over low heat until the beans reach their desired consistency.
