Also known as white vatana or matar, dried green peas can be used in place of fresh ones, with a milder flavor and denser texture. These peas benefit from an overnight soak. Rinse them clean and cover by at least 2 inches of water and soak for at least 8 hours. You can use the soaking liquid to cook the peas as well.
