Step one
Place a large skillet over medium heat, add the oil and onion. Cook for 4-5 minutes or until soft.
Step two
Add the crushed coriander and papaya. Slightly crush the papaya as it cooks until it is saucy.
Step three
Add the drained okra, curry powder, lemon juice, and water and bring to a simmer.
Step four
Cover and cook for 5-6 minutes or until the okra is just tender. Add salt and pepper to taste and serve with steamed white rice and beans.
