Cardamom and Ginger Irish Soda Bread

We've adapted the classic Irish soda bread and filled it with all the things we love, dark chocolate, crystalized ginger, currents, and cardamom.

  1. Pre-heat the oven to 400 degrees.
  2. Beat the buttermilk and egg together in a medium bowl.
  3. In a separate mixing bowl, whisk together the flours, ground flax seed, cardamom, baking soda, sugar, and salt.
  4. Cut the cold butter into the dry ingredients until the mixture resembles coarse pea sized crumbs. Mix in the the cocoa nibs, currants, crystallized ginger and chocolate.
  5. Slowly add the buttermilk and egg mixture. Stir with a large spoon until the dough comes together, if the dough seems sticky add a bit more all purpose flour 1 tablespoon at a time.
  6. Once the dough forms, transfer to a clean countertop and shape into a large round.
  7. Place the dough in a parchment lined baking sheet or cast iron skillet. Make a deep cut across the top of the bread and sprinkle with the remaining tablespoon of ginger sugar.
  8. Bake the bread for 35 -40 minutes, until a knife comes clean out of the center.
  9. Cool on a wire rack for at least 30 minutes before slicing.
