Sunrise Ruby

A simple yet super refreshing cocktail fragrant with rosemary and preserved lemon paste. If you make the rosemary and preserved lemon simple syrup in advance, you can whip it up on a whim.

Step one

Bring ingredients to a boil. Remove from heat and let cool. Remove rosemary sprigs and store in an airtight container for up to one week in the fridge.

  • white tequila,1,ounce,,
  • rosemary and preserved lemon simple syrup,3/4,ounce,,
  • lime juice,3/4,ounce,,
  • grapefruit juice,4 1/2,ounces,freshly squeezed,
  • club soda,,,to top off and serve with ice,
  • lime or grapefruit peel,,,for garnish,
  • rosemary sprig,,,for garnish,

Step two

Combine the tequila, rosemary and preserved lemon simple syrup, lime juice, and grapefruit juice in a shaker with ice. Fill a highball glass with ice, strain in cocktail, and top off with club soda. Add citrus peel and rosemary garnish and serve.
