Bring syrup ingredients to a boil. Remove from heat and let cool. Remove rosemary sprigs and store in an airtight container for up to one week in the fridge.
A simple yet super refreshing cocktail fragrant with rosemary and preserved lemon paste. If you make the rosemary and preserved lemon simple syrup in advance, you can whip it up on a whim.

Combine the tequila, rosemary and preserved lemon simple syrup, lime juice, and grapefruit juice in a shaker with ice. Fill a highball glass with ice, strain in cocktail, and top off with club soda. Add citrus peel and rosemary garnish and serve.
