Sweet & Tangy Tamarind Vinaigrette

This sweet and tangy tamarind vinaigrette comes together in minutes but makes everything it touches 10x better. Tart tamarind, toasted coriander and a hint of caramel from the powdered jaggery are a great match. Simply toss with summer cherry tomatoes and sliced chiles.

  1. If using whole coriander, lightly toast in a dry skilled over medium heat for 2-3 minutes, or until fragrant. Using a mortar and pestle crush into a powder or grind in a spice grinder. 
  2. To a mason jar, add the tamarind, lime juice, jaggery, coriander powder, water, olive oil and salt. Blend for 15-30 seconds or close the jar tight with its lid and then shake vigorously until it forms an emulsion. Taste the dressing and adjust seasoning if necessary.
