Also called ventresca, this tinned yellowfin tuna belly is prized for its supple texture much like white tuna, but is much leaner, with about half the fat and a meatier flavor. It is fished by traditional line and hook methods (dolphin free), and cleaned and packed by hand. It comes from the Basque region of Spain, specifically, the Bay of Biscay.
