Used for making dashi, the foundation of traditional Japanese cuisine, Matoba Suisan uses traditional methods to make one of the highest quality katsuobushi (dried skipjack tuna or bonito flakes). Not fermented, these shavings are known as Arabushi, which is skipjack tuna that has been poached and smoked. They have a wonderfully smoky, slightly salty, rich umami flavor that adds depth to dishes. With only two ingredients plus water, when paired with quality kombu, Matoba Suisan's katsuobushi produces dashi with a deep, round flavor full of umami. Katsuobushi can also be used as a delicious topping for Japanese favorites, okonomiyaki, and agedashi tofu.
