Sri Lankan Roasted Curry Powder

Many Sri Lankan curry powders are roasted to bring dark, rich, nutty flavors to stir fries and curries. This batch is produced by Sri Lankan food scribe and obsessive Skiz Fernando, and includes raw rice for a toasted bittersweet bite, fresh pandan leaf for herbal complexity, and high quality cardamom, mustard seeds, clove, and other spices. Traditionally, Sri Lankan roasted curry powder is used with meat dishes while unroasted versions are paired with vegetarian recipes, but we also like the heady meaty umph this blend adds to a pot of dal or some eggs.
