Rancho Gordo Prepared White Hominy 16oz

Rancho Gordo's dried hominy is made from new crop heirloom corn that has been nixtamalized. It is soaked in mineral lime to release the vitamin niacin, making the grain healthier and easier to digest. The skin is removed to give it added flavor. Most commonly used in posole, hominy is delicious in salads, soups, stews, and tossed with bitter greens. You can also puree leftovers to make hominy grits. It is superior to canned hominy and worth the extra step.

How to prepare hominy:

Sort and rinse hominy. Soak for 8 hours in cold water, then drain. Add to a large pot with 1 roughly chopped onion and cover with 2 inches of fresh water. Bring to a hard boil over high heat for 5 minutes, then reduce to a gentle simmer. Cook hominy uncovered until chewy and tender but not chalky, approximately 2 hours. Hominy usually flowers, like popcorn, when finished.
